Too two festive

If you have the good fortune to be planning a small and perfectly formed Christmas dinner for two this year, here are some suggestions:

Pot-roast pheasant with pomegranate juice (from a carton) and peeled walnuts. Brown first in butter, add the juice to a third of the way up and cook, covered and breast side down, for 30 minutes. Turn over, and cook uncovered for 10 minutes with the walnuts. Finish by whisking a little more butter into the juices.

A couple of partridges wrapped in bacon and roasted are more traditional. Make sure the oven is very hot before you put them in

and don’t cook for more than 30 minutes. Chipolata sausages go well, as do cranberry and bread sauces and watercress salad.

Buy two thinly cut fillets of turkey breast and bash flat. Season, add a few fresh sage leaves, then roll in thin slices of parma ham. Fry for 10 minutes in a mix of olive oil and butter, add a dash of Marsala, heat until it starts to bubble, then serve with the pan sauces.

Briefly sear salmon steaks in butter then simmer for 10 minutes in the juice of a couple of oranges. Serve with fresh chervil.
